Guide · Food exports
Traceability for food exports what SAG and Sernapesca require
Informational guide, not legal advice. Requirements change by resolution and by destination country: check the current text from SAG or the Sernapesca manual before you export.
How it looks today
Three papers for the same lot that do not talk to each other
The dispatch note has the farm, the process log has the lot and the label has the plant code. If none points to the others, answering which growers a lot came from takes hours of digging through folders, and in a recall those hours count.
Who requires what
Which agency requires traceability, depending on what you export
SAG covers primary fruit and vegetables; Sernapesca, seafood; MINSAL, every food plant. On top of that, each destination country adds its own protocols.

|---|---|---|
| SAG | Fresh, frozen, dehydrated or dried fruit and vegetables for human consumption abroad | Exempt Res. 7,550/2021 |
| Sernapesca | Export fishery and aquaculture products, from raw material to certificate | Food Safety and Certification Manual |
| MINSAL | Every food plant: production records with origin and destination | RSA, art. 66 |
| Destination country | Its own protocols, which SAG or Sernapesca adopt market by market | Varies by market |
Res. 7,550 defines primary fruit and vegetable products as fresh, frozen, dehydrated or dried. A processed product, like the jam in this page's examples, is not on that list; article 66 of the Food Sanitary Regulation still requires it to record the origin and destination of what it produces.

| What | Requirement | Source |
|---|---|---|
| Register | Every participant that grows, imports, processes, packs, stores or exports registers in the Agricultural Registry System (SRA). Except growers, they also sign the Operational Food Safety Agreement. | Res. 7,550, items 2, 8 and 9 |
| Get a code | The SRA assigns a CSG to the grower, a CSP to the plant or packhouse, a CSE to the exporter and a CSI to the importer. | Res. 7,550, item 7 |
| Label and ship | The codes go on the export package label, and the farm's CSG goes on the SII dispatch note that covers the transfer to the plant. | Res. 7,550, item 12 c) |
| Frozen and dried | The package carries only the CSP, but the plant keeps traceability of every CSG in each lot or batch, in physical or digital files. | Res. 3,943/2022, item 6 |
| Verify origin | The exporter or plant checks that raw material comes from farms registered in the SRA. | Res. 7,550, item 12 d) |
| Trace consignments | The exporter keeps a permanent traceability system for raw materials, packaging and inputs, with their origin and where they were processed or stored. Records stay available for at least 2 years (fresh) or 3 years (frozen). | Res. 7,550, item 11.2 c) |
| Plant prerequisites | The packing or processing plant includes traceability of raw materials and finished goods, and a product recall plan. | Res. 7,550, item 11.3 b) |
| Notify | Any confirmed contamination of an exported product is reported to SAG immediately. | Res. 7,550, item 12 e) |
Sernapesca
Seafood: what Sernapesca requires
The technical rules are in the Food Safety and Certification Manual; plant traceability is in Part II, Section II (October 2026 version).
The DS 129/2013 declarations go into Sernapesca's traceability system. For the European Union, the catch certificate is governed by Exempt Res. 2,794/2009.

| Get approved | To qualify for export health certification, the plant joins the Health Control Programs, is listed in the Plant Registry and submits, among other things, its traceability procedure or program. | Manual, Part II, Sec. II, Ch. I |
| Traceability Program | Quickly links the final product with raw material and processes, tying in the control records. It identifies suppliers and customers, defines a coding system printed on primary and secondary packaging, and names a person in charge. | Manual, 3.3.1 |
| Raw material origin | Farmed fish: site and its RNA code, pen, species, tax documents and arrival date. Other species: vessel, RPA or RPI code and landing document. Bivalves: harvesting area. | Manual, 3.3.2 |
| Product recall | The traceability exercise for the affected lot must not exceed 48 hours, and the plant runs at least two documented mock recalls a year. | Manual, 3.2 |
| Declare | Processing plants declare supply, production and dispatch in Sernapesca's system before 2 p.m. on the business day after each event. | DS 129/2013, arts. 10 and 12 |
| PAC | Quality Assurance Program: voluntary, HACCP-based, for category A or B lines, valid for two years. Since 1 April 2026 Sernapesca recognizes accredited third-party certification to join or stay in it. | Exempt Res. DN-1,995/2026 |
| Certify the shipment | Health or origin certificates are requested in Neppex via Siscomex, with the plant and exporter registered with Sernapesca. For the European Union, the catch certificate proves the legal origin of the raw material. | Neppex procedure |

In the app
From paper to signed digital records
SAG accepts lot records in physical or digital files, and Technical Standard 174 accepts computer records if data and signature integrity are ensured. This is how the app keeps them.
